It does not matter who cooks taste authentic, always true to this culture. There are chefs in the world trained in different cuisines, I know that some people in Mexico, are trained sushi chefs. If you do not know that you are not by the taste of food from someone who was not willing to tell Japanese. For me, it does not matter, the taste is what counts.
